How was your Easter weekend?

Mine was fabulous. It was a much-needed break to spend a few days with family and friends celebrating our Lord’s sacrifice. We had so much fun laughing and eating—oh my word, the food!

It was so delicious I had to share another family favorite—mac and cheese. Recipe below.

Recipe of the Week: Sean’s Mac and Cheese

Sooo yummy. 

1 16 oz box of elbow macaroni, cooked and drained. Add salt and pepper, 1-2 Tablespoons of butter and milk.

Stir together:

  • 2 eggs whipped

  • 8 oz (1 cup) sour cream

  • ¾ of a large container of small curd cottage cheese

Add mixture to macaroni.

Stir in:

  • 2 ½ bag (12 oz each) of shredded cheddar cheese.

Spread into a greased 13x9 pan, bake 15 minutes at 350 degrees. Add remaining ½ bag of cheese to top and bake for an additional 15 minutes.
