Goodbye Summer

I hope you enjoyed a fabulous Labor Day weekend, because now things are getting serious. It’s September, which means back to school and getting ready for all the holidays that are right around the corner and all the other craziness that life will throw at you.

This is an especially big year for me as my oldest son is a senior. A senior? Where did the time go? Not to mention I can’t possibly be old enough to have a son who is a senior in high school. What happened?

With the days getting shorter and schedules nuttier, I wanted to share one of my favorite salad recipes, Grape Salad. Along with being super easy and fast to make, it’s fat free, sugar free and super yummy.

Recipe of the Week: Grape Salad

Ingredients: 

  • 16 oz fat free vanilla yogurt

  • 1 small carton of fat free, sugar free vanilla pudding

  • 1 regular carton of fat free Cool Whip

  • 2 cups of green grapes (or an entire bag, which is what I use)

  • 2-3 apples, peeled and cut up into pieces

  • ½ cup chopped walnuts

Whip the first three ingredients together until smooth. Add fruit and nuts, stir and enjoy.
