Front Porch: An Easter Tradition

Happy Easter Beautiful!

Easter is one of my favorite holidays. I just love it.

And as much fun as the bunnies, chicks, candy and egg hunts are, Easter is so much more than that. As a woman of faith, it is the celebration and recognition of the sacrifice of Jesus for all of us.  

It's Resurrection Day.  

Easter is a time of reflection, celebration and a time of gratefulness for our lives and the lives of the people we love because God loved us enough to sacrifice His only begotten son for our salvation.  We are all saved by His Grace and His Mercy.

In my family, we celebrate by first getting dressed up in our new Easter outfits and attending church. Then, it’s off to Mom’s for a big ole Sunday dinner. We have all the fixings like honey-glazed ham, southern greens with smoked turkey, candied yams, Mom’s potato salad (one of my faves–recipe below), and last but certainly not least, mac and cheese (we don't call it macaroni and cheese). 

Everything is so good, I’m hungry just thinking about it.

After we all are as full as ticks we head out back for the annual Easter egg hunt. Even the 25-year-old grandkids hunt for the GOLDEN EGG. (Because who wouldn’t want to find a Golden Egg?)

And EVERYONE gets an Easter basket (yes, even the big kids!).

Recipe of the Week: Mom’s Potato Salad

Hands down, this is my favorite Easter recipe, so of course I had to share it with y’all.

Here’s is what’s in it:

  • 6 medium potatoes

  • 1 boiled egg, chopped

  • 1/8 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 2 tablespoons sweet relish

  • 1 tablespoon dill relish

  • 1/8 teaspoon hot sauce

  • 2 tablespoons Duke's mayonnaise (or any mayonnaise of your choice)

  • 1 teaspoon yellow mustard

  • 1/3 cup chopped onion

  • Salt and pepper to taste

Here’s how you make it: 

  1. Start by boiling the potatoes until they are fork-tender. Once boiled, drain and allow them to cool slightly before handling.

  2. Once cooled, peel the potatoes and chop them into bite-sized cubes. Place them in a large mixing bowl.

  3. Add the chopped boiled egg to the bowl with the potatoes.

  4. In a small bowl, mix together the garlic powder, paprika, sweet relish, dill relish, hot sauce, mayonnaise, and yellow mustard until well combined.

  5. Pour the dressing mixture over the potatoes and egg in the large mixing bowl.

  6. Add the chopped onion to the bowl.

  7. Gently toss all the ingredients together until the potatoes and egg are evenly coated with the dressing.

  8. Season the potato salad with salt and pepper to taste, adjusting according to your preference.

  9. Once everything is mixed together well and seasoned to your liking, cover the bowl and refrigerate the potato salad for at least an hour to allow the flavors to meld together.

  10. Serve chilled and enjoy your homemade potato salad!
